Pink Lady Vanilla Valentine's Day Cupcakes

I've been trying to write a half decent post this week but my attempts have been futile. It has taken me over an hour just to write a first paragraph that I'm not even very happy with. I got so flipping frustrated that I've given up for now and have resorted to watching tv instead. It's days like these I'm kind of thankful that I'm not studying.
 
So, it's another short and sweet post today. The best I can do at the moment is share some cupcakes that I made a couple of weeks ago.
I had every intention of baking these pretty pink cupcakes as a little Valentine's Day treat for my family, but due to having a horrible headache it didn't happen. Not wanting the chocolate hearts I had purchased to go to waste, I ended up doing some belated Valentine's baking and carted the cupcakes off to my connect group at church instead and brought home what was left over.
I bought the chocolate hearts from a cheap chocolate store. At first I was pretty annoyed to find that they had 'pink lady' embossed on them when I took off the wrappers, but I ended up liking it when I realised that it worked quite well with the pink colour scheme and made me look really clever. To make the sloppy icing look better and to balance out the pink I also used some red jimmies to decorate.
For these cupcakes I decided to try out a new recipe. After reading several baking blogs that rave about and recommend Magnolia's Vanilla Cupcake Recipe, I've been busting to try it for myself. I followed their vanilla buttercream recipe too and just added a couple drops of pink food dye.
 
To be totally honest I don't really understand the hype over this recipe. I followed it to a tee and have made far better and more amazing cupcakes than these. These cupcakes were a little too doughy for my liking and annoyingly sticky. This really shouldn't have surprised me considering how much flour the recipe calls for.
The icing? I don't know if it was something I did, but it was runny and impossible to pipe with. I ended up just slopping it carelessly on top. I was quite disappointed. I did love the taste though. It was perfectly sweet and I was impressed with the quantity that one batch produced.
Don't get me wrong, these cupcakes were edible and enjoyable. I guess I was just expecting a bit more 'wow'. They all got eaten though, so that says something, right? What can I say, I'm just a hopeless perfectionist.
