chocolate and strawberry marble cake
Happy Friday, Chronic Crafties! Today I am sharing a marble cake recipe. It's a chocolate and strawberry marble cake with white chocolate frosting, to be precise. Don't get too excited though -- it didn't quite turn out the way I had hoped. It was a bit of a flop really, but I thought I'd still share it with you in the hopes that my failure will be your success.
Cake ingredients:
150g unsalted butter
3/4 cup caster sugar
3 eggs, lightly beaten
1 teaspoon vanilla essence
1/2 cup milk
2 tablespoons cocoa powder
4-5 drops red food colouring
4 drops strawberry flavoured essence
1 cup self raising flour
1 cup plain flour
White chocolate frosting ingredients:
175g white chocolate, chopped into small pieces
75g unsalted butter
115g icing sugar
90ml double cream
My cake baking skills haven't been quite up to scratch lately. I seem to nail cupcakes, cookies and slices, but when it comes to a perfectly moist baked cake, I fail. Miserably. That's something I really want to work on in the rest of this year. As you can see by the cracks in the cake, it cooked way too fast in the oven, so it came out tasting pretty dry, which was really disappointing. It was still quite edible and somewhat enjoyable though, so I guess that's a positive. It didn't rise to my expectations though, and the only best part about it was the white chocolate frosting.
How to make the cake:
1. Preheat oven to 180°C. Grease or line cake tin with paper.
2. Using electric beater, beat butter and sugar in small mixing bowl until light and creamy.
3. Add the eggs gradually, beating thoroughly after each edition. Add the essence, beat until combined.
4. Transfer mixture to larger mixing bowl. Using a metal spoon, fold in the sift flour alternately with the milk.
5. Stir until just combined and the mixture is almost smooth. Divide the mixture evenly between two bowls. Add the sifted cocoa powder to one bowl and the colouring and flavoured essence to the other. Mix well.
6. Spoon the two mixtures alternately into prepared tin. Swirl mixture in circles with skewer. Bake for 35 minutes.
7. Leave cake in tin 10 minutes before turning onto wire rack to cool.
8. Ice with white chocolate frosting and decorate with fresh strawberries.
How to make the white chocolate frosting:
1. Melt butter, chocolate and cream in saucepan until combined.
2. Beat in icing sugar until desired consistency.
I do love the colours, and the frosting does compliment the cake so well. I am definitely going to experiment with this cake and recipe some more until it meets my standards of perfection.
