Crafty Fridays: Banana Loaf

I baked a banana cake! I must say it was slightly on the doughy side, but still yummy nonetheless.


You'll need: 2 cups flour, 1 cup sugar, 120g butter or margarine, 2 eggs, 3 large ripe bananas (peeled and mashed), 3 tablespoons water, 1 1/2 teaspoons baking powder, 1 teaspoon bicarbonate of soda, pinch salt, icing sugar to decorate.


Method: 1) Cream the butter or margarine and sugar in a bowl until light and creamy in texture. 2) Stir in the mashed bananas and beat to combine thoroughly. 3) Beat in the eggs, one at a time, blending well. 4) Sift the flour and salt into the mixture and stir well to blend.


5) Dissolve the bicarbonate of soda in the water and stir into the mixture, then stir in the baking powder. 6) Pour the batter into a greased loaf tin and bake in the oven at 180°C until done, about 45 minutes. 7) Let cool in the tin for a few minutes, then turn out onto a wire rack to cool completely. Dust with icing sugar.
