Chicken Parma & Pudding Night

I devoured the most delicious dinner last night. Both blog and share worthy I believe. First on the menu was Chicken Parmigiana, contently consumed. My Dad makes the best homemade parmas, dare I say better than some of the restaurants! And believe me, I have eaten a hell of a lot of parmas at various restaurants and I love my food, so you know food is good when I blog about it!



Chips are compliments of Nandos, and I must say the salad my Dad made was divine (I'm really fussy when it comes to salads)! I love beetroot in salads, it's just beautiful!



Oh so yum!



And if your mouth isn't watering yet, this pudding is sure to please. A sensational serving of Apricot Pudding- an appetiser to behold. This pudding is seriously divine, made by my delightful mum of course! This pudding is better than restaurant quality I tell you!



And the real beauty is that it is an absolute sinch to make. Perfect for those bad pain/fatigue days. I've made this pudding myself a few times over the years and thought I'd share the recipe with you so you too can indulge. This mixture goes along way. We had my nana and auntie down as guests for the evening and it served up 6 generous lashings.



Apricot Pudding

You'll need:

2 eggs
1 cup sugar
2 big spoons butter
2 cups self raising flour
4 big spoons apricot jam
3/4 cup milk
2 teaspoons bicarb soda
2 teaspoons vinegar

Method:

1. Mix egg, sugar and butter. Add jam and flour. Mix milk, bicarb and vinegar into mixture.
2. Put 2 1/2 cups boiling water in baking dish then put in less than a cup of sugar into the water. Mix. Pour mixture over water. Bake at 180c for 1 hour.



And the entertainment for the evening? My favourite tv shows Home And Away and Glee.

I watch Home And Away religiously. If I miss an episode I have to catch up and if I'm out I will do everything in my power to be home at 7pm to watch it. The whole entire show is just about twisted love triangles, and someone being wrongly convicted of murder and yet I still watch it every night, guaranteed.

I've been getting into Glee lately too. I watched one episode towards the start of the first season just to see what all the hype was about and could never really get into it but for some reason I started watching it again and now I'm hooked! I have to buy the first season now, I have a lot of catching up to do!
